Serves 1.
- 6" French Baquette or Pugliese, sliced in half
- 1/4 cup Fresh Basil
- 1 clove Garlic, chopped
- 2 - 4 tbsp Extra Virgin Olive Oil
- 2 slices Mozarella or Provolone
- 2 Roasted Red Peppers, seeded and sliced in half
- In a food processor, add basil and garlic. Pulse 2 - 3 times.
- Through feeder tube, slowly pour in olive oil until mixture becomes paste-like and spreadable, about 2 - 4 tbsp.
- Spread on insides of sliced bread.
- Top bottom slice with red peppers and cheese, put top slice on to form sandwich.
- Toast in a panini maker on medium heat for 3 - 5 minutes or until cheese is melty and bread is slightly toasted.
