Banana Chocolate Chip Bread |
Serves 8 - 12.
- 4 Apples, cored and cut into small cubes
- 1/4 cup water
- 1 tsp Cinnamon
- 2 Bananas, mashed with fork
- 2 Eggs
- 1 tsp Baking Soda
- 1 cup Sugar
- 1 1/2 tsp Baking Powder
- 2 cups All-Purpose Flour
- 1/8 tsp Kosher Salt
- 1 cup Chocolate Chips (optional)
- Spray loaf pan with non-stick cook spray, set aside.
- Preheat oven to 325* degrees F.
- In a blender, puree apples, water and cinnamon, set aside.
- In a large bowl, mix baking soda, sugar, baking powder, flour, salt with fork.
- Add applesauce and eggs, mix with electric mixer till well combined.
- Gently fold in bananas and chocolate chips.
- Pour mix into prepared loaf pan and bake for 1 hour 20 minutes.
- Let cool for 10 - 15 minutes before removing from pan, then let cool on wire rack.
- Slice and serve, store leftovers in foil in refrigerator.
